Pineapple Cake

The week before we left Texas, a woman in my MOPs group made this cake and we all loved it and got her recipe. It has taken me this long to try it, but it was a success! And so easy.

Pineapple Cake

1 yellow cake mix
1 cup vegetable oil
4 eggs, slightly beaten with fork
1 (16 oz.) can crushed pineapple with juice

Grease and flour a 9"x13" pan.
Combine all ingredients with a spoon.
Pour into prepared pan and bake at 350 degrees for 30 minutes.
Cool completely.

Topping

1 (8 oz.) container Cool Whip
1 (6 oz.) pkg. instant vanilla pudding
1 (16 oz.) can crushed pineapple with juice

Combine pudding mix and pineapple.
Fold in cool whip.
Spread on cooled cake.

When I originally read the recipe for the topping, I assumed a package of pudding mix, unmade. But then when I got home to make it, I thought about it too much and decided that what it meant was the actual pudding. Now that I have typed it out, I think it did mean pudding mix.

I thought you would be interested to know what my cool whip and vanilla pudding look like, so here ya go:

Good times and yummy food!

  1. So I read then and totally started craving pineapple cake. To the extent it is now sitting half-eaten on my counter.
